Old Tom style gins are the original cocktail gin. Fragrant and lightly spiced with a hint of roasted barley sweetness Campfire Old Tom Gin is a gin for all seasons.

In spring try the Square Pear – a combination of aromatic bitters, pear cider and gin. In summer it just has to be a long, cool gin mint julep – gin, lots of crushed ice, sweetness, refreshing mint and a straw for slow sipping whiling away a hot afternoon lazing in a hammock.

For warm autumnal days and colder evenings our twist on the classic Tom Sawyer, an Old Tom Sawyer, uses 21 dashes of Bitter Union No 1 Aromatic Bitters and 7 dashes of Spiced Orange Bitters plus fresh squeezed lime juice for a citrus kick! Heading on in to winter cosy up with a La Casa Sagrada – the combination of ginger syrup and sherry complement Campfire Old Tom Gin’s juniper and spice notes.

History
This Christmas gin cocktail creation reminds us of parents’ sipping sherry at Christmas while we ate gingerbread! Our Campfire Old Tom Gin pairs perfectly with the Palomino Fino sherry and it’s light cinnamon and cardamom spices are gently enhanced by the ginger syrup.

Ingredients
45ml Campfire Old Tom Gin
22.5ml Tio Pepe Palomino Fino Sherry
22.5ml Opies Ginger Syrup

Preparation
Add all the ingredients, plus 4-5 cubes of ice, to a cocktail mixing glass or cocktail shaker can. Stir well for 30 seconds to dilute and chill the ingredients. You’ll notice some condensation forming on the outside of the mixing glass/shaker can. This gives you an idea of when the cocktail is fully chilled.

Use a fine strainer and pour into a pre-chilled cocktail coupe glass. We’re not huge fans of garnishes but we are rather partial to serving this with a small piece of ginger bread.
